This VFer (me!) is only having a glass of chardonnay wine for her dessert since I lack a sweet tooth (!) but I got a pumpkin cheesecake and caramel apple pie from Meijer that's my DH favorite for desert for him and his brother. They both have a major sweeth tooth! I can't imagine it!

I will make brownies to take to my MIL's. My SIL's fiance usually brings a chocolate pecan pie, which is REALLY rich, and my MIL makes apple pie.

I'm making this pumpkin pie, but leaving out the nutmeg and reducing the sugar to one-half cup.
Homestyle Vegan Pumpkin Pie

I'm also making a chocolate pie using this recipe as the filling. I cut back on the chocolate chips a bit.

hey cindy:

it's easy:

preheat oven to 350°; grease a 13x9x2" pan

combine:
1 c. softened unsalted butter
2 c. flour
1/2 c. white sugar

spread evenly into the pan. bake for 15 minutes and remove from the oven - leave oven heat on at 350°.

for the brownie layer:

*1 package brownie mix, 17-20 oz size
1 egg
1/3 c. water
1/3 c. vegetable oil
optional: 1/2 t. almond extract

*i used one of the bags from the Sam's club box "betty crocker ultimate brownie mix."

mix the above in a bowl by hand. spread onto top of shortbread layer, then bake in the already heated 350° oven for 35-40 min. do not overcook -brownie may look like it needs more baking time, but do not exceed 40 min.

cool and cut with a plastic knife. makes 24 bars - or 1 big one for yourself. just kidding on that last one.

As it turned out, I made chocolate pudding.

You know, chocolate pie without the crust or whipped cream.

Felt nice and cold on my sore throat, in any case.
