Gem-that is a good idea! I'd put it in a graham cracker crust.

Trader Joe's now sells cookie butter cheesecakes.....very dangerous! I read a review of it online. I have not tried it.

True!
This morning they had blueberry muffin samples. I did not try them. I did not check for the pie. I did not want to be tempted.

Good for you!!!!!

Unfortunately I won't be able to get there today. Guess I'll have to wait until next weekend.

I tried this just now, and the mixture was really bland. It tasted like sour, vaguely pumpkin-flavored Coolwhip. I doubled the pumpkin and trebled the sugar (to 1.5 teaspoons), which helped only slightly. I don't bake a lot, so I don't have a ready repertoire of recipe fixes. Anyway, I decided it might be salvageable as a layer in a pie, so I whipped up a box of pumpkin pie pudding (no idea why I had that!!), poured it into the crust, then topped with the Coolwhip mixture. We'll see.

I have blended pumpkin and cream cheese together successfully in the past, but this was just overwhelmingly Coolwhippy, without being sweet enough to actually be palatable. It kind of reminded me of this awful dessert from Nutrisystem back in the early 90s. (shudder)

Gem-I'm sorry the recipe was so bland. I hate wasting ingredients. Thanks so much for posting about it. I"m not going to try that one.

Sherry

ETA: maybe this recipe would be better?
