Definitely Kelly Coffey Meyer's 30 Minutes to Fitness (but as a perpetual beginner, I find it's fine to use lower weights and work at half speed when necessary. I like her style, and find it easier to adapt her workouts than others.)
Classical Stretch/Essentrics doesn't feel easy to me, I guess it's always one of those work at your own level situations where it's never easy, no matter how long you practice.
