I make overnight oats: mix 1 cup oats to 1 cup (whatever kind you like) milk, and leave em in the refrigerator overnight.
They're soft in the morning, and you can eat cold or put in the microwave for a minute and warm up.

I use a vanilla protein shake I love for my liquid, and add a tsp of chia seeds, with a little extra shake cause they absorb it.

You could also make baked oatmeal squares and warm them up each day:

I'd check into the ugly word diet, too. Grains and sugars are notorious for having a negative impact on our health.

As with everything, YMMV. We're all so different. There is a lot you can do with lifestyle, though.

I've had high cholesterol since I was in my early 20s and very thin. I think it's genetic in my case. There was one time when a doctor suggested a statin but I heard bad things and tried dietary and lifestyle changes which did help somewhat. It's still over 200 but my doctor doesn't suggest medication. They say the ratio is ok, the good cholesterol is very high and the bad low. I haven't had it checked in awhile. I'm due for a physical but I've been putting it off. I think I'll schedule one for the fall.
I use both McCann Steel Cut and Quaker Oats Old Fashion. The Steel Cut takes some planning and I tend to us it more in the winter.

I take a half cup of of Quaker Oats Old Fashion oats and pour a half cup of unsweetened almond milk to it. Then I put it in the microwave for 3 minutes. When it comes out I add a tablespoon of ground flaxseeds, blueberries and/or 1/2 a mashed banana, or a tablespoon of almond butter and I always add cinnamon.

You probably already know but the instant oats aren’t as good for you. Your better off with the Old Fashion and they only take 3 minutes in the microwave.

My son had brought over some Bob's Red Mill whole grain rolled oats. I think that's the same type you're talking about? I always thought oats took a long time to cook but the instructions say a couple of minutes in the microwave. Who knew?

That does look delicious! I like a crunchier texture.

If you like a crunchier texture, you may like steel cut oats. They are the least processed, so they are healthier. I love making them in the Instant Pot because you do not need to babysit and stir them.
