Had to bring this thread back up. As a result of reading this thread awhile ago, I made Alton Brown's "The Chewy" recipe yesterday...A-MAZING! And I do not say that word lightly.

I browned the butter first as per The Pastry Chef's recommendation. I also added some walnuts and only baked 12 minutes since I made mine a little smaller.

This is my new go-to recipe!

You might want to try adding a bit of dry oatmeal to your batter (not enough to make them taste like oatmeal cookies, but just enough to give them a bit of tooth--plus its a pretty healthy add in).

And make sure batter goes onto a cool cookie sheet.

I just made this recipe (and posted it in the recipe forum). I think this is the best chocolate chip cookie recipe I have ever made!

You do not even need a stand mixer for this recipe. The butter is melted. You only need two bowls and spoons.

The cookies come out very moist, soft, thick and chewy. (just the way I like them)

There are pictures on the blog, including a link to the way she shapes the dough to get thick cookies. They do look underdone when you take them out, but they finish baking while they cool.

The addition of cornstarch and an extra egg yolk plus chilling the dough made the cookies moist, soft and chewy.

My husband and son agreed it was the best recipe I've tried. Note that this is a smaller batch recipe. I made about sixteen cookies and froze dough for about six or seven more cookies to save for another time.

This recipe does not make three dozen, but that is fine with me-if we have too many cookies around, they get eaten really fast! The recipe can easily be doubled, though. You can make the dough a day ahead.

I didn't have baking soda when I decided to make chocolate chip cookies last weekend (DS's birthday). I used baking powder instead, and they were crumbly and soft instead of crunchy, as usual. I don't use shortening or margarine, just butter.

I am bookmarking that recipe blog. I think I'll bake some of those for my birthday and share them with my fellow Schnibbelteam moms! I won't be baking cookies until my birthday

I know I'm late to this thread, but the "$250 Neiman Marcus Cookie Recipe" is by far the best recipe I have ever tried for chocolate chip cookies.
