Your post encouraged me to make a tofu scramble this AM with mushrooms, spinach, red peppers and zucchini. (Happy Herbivore recipe) Now I'm thinking about veggie fried rice for breakfast and some curried lentil soup I have made. When I ate meat I used to eat chicken/turkey burgers before a long day. Hope to see some other ideas posted.

i want to make some other stuff besides basic eggs and sausage. i ate leftover thai food with rice and kale the other morning and it tasted great because it's all i had that was savory.

Made an oat, wheat germ, tempeh skillet with hoisin and soy sauce. It's like a savory porridge that we'll eat tomorrow for breakfast. I make a stir fry to go with it since the hoisin sauce was screaming for it.

Mix 1/2 c. cooked quinoa (a staple I tend to keep in the fridge) with one hard-boiled egg and steamed spinach. Drizzle with a little really good extra virgine olive oil and season with pepper and sea salt. Got it from the Physique 57 book. I have it at least once a week.
