You might like Peas and Thank You and/or More Peas, Thank You by Sarah Matheny. See if your library has them or google her name and several recipes that other bloggers have made will come up. They're both family-friendly vegetarian cookbooks that take lack of time into account and don't have exhaustive ingredient lists.

She stopped blogging after adopting a little girl from China and wasn't able to keep the recipe archive online due to cost unfortunately, but I've gotten several good recipes from her books, including her veggie burger variations, "Mmmm sauce," and others.

It is a great recipe---I took an "Eat Your Greens" class and this recipe was worth the class fee alone! I am not vegan but do make this often.
