I have to agree that anything that requires long, slow cooking does well in the crockpot, watched or not. There's nothing better for chili!

I've often used mine for chili, beans, etc. that cooked while I was at work. I never had a problem, but I can see how someone might not want one to perk along without supervision. As a renter, the kitchen I'm in now is some iffy for leaving a crockpot going by itself all day. The electrical draw is negligible, but I don't quite trust the wiring to handle the load.

Looking forward to trying some of the referenced recipes!

I used my crock pot all the time when I was working full time. I'd let it cook during the day. I would come home for lunch and check on it. I LOVED coming home and having dinner ready.

My favorite dish was with a whole chicken, carrots and celery, and I believe basil cooked in white wine. The chicken would just fall off the carcass.

I'm attempting a crockpot fave - the recipe was orignally on a year of slowcooking blog and I added a few things, etc but it's really tasty though by the time I add 2% cheese and bolillo roll I may be doing a higher point meal than normal but it's filling for me even when I'm NOT watching points so I may do half..just depends after I crunch the numbers.

the recipe calls for a fattier beef roast (think it was chuck) but I put in a 1 lb 5 oz(that's what the hunk came to) chunk of round roast, most of the carton of beef broth(woud've used all of it but the crockpot would've been too full), 1 1/2 sliced sweet 1015 onions, jar of peperoncins, 4 small cloves garlic and it's gonna cook all day. the last 3 times I made this it was good but the last time I didn't use as much onion since I thought I had 2 but only had 1 and I wanted more onion! I find a HUGE meal if I take a bolillo roll (slice of french bread or whatever would probably work too), sliced it to near the bottom and pulled apart a bit..put an oz or so of 2% mozarella(shredded), some of the beef, 2 peppers(stems are pretty soft but I pulled them off just for general principal!), spoon the broth over and add onions of course! then top with 1/2 slice of red fat swiss or red fat baby swiss and stick in the toaster oven. I a lternate between a high temp bake or using broil if I stand there watching it. I like it to get a bit toasted on top. I have to cut and eat in little sections or just use a fork.

now to hope I can finid individual bolillo rolls so I'm not stuck with a dozen ct bag...this is probably gonna be a little higher in points and I want to sprea them out and not have the bread go icky - usually I freeze leftovers. this would probably be good with chunky baby carrots thrown in and eaten with potatoes like a regular roast.

You can almost always get a crockpot at a yard sale for around $5. I use mine a lot. It makes kick butt spaghetti sauce.
