Another vote for Season 11 for your situation. I have season 6,8,10 and 11 and 11 was the first one I did all the way through.

Also - there are some short C/S videos - tutorials and mini-classes - available at no charge through https://essentrics.com/videos/

Yes!!! I have done the same and have gradually built up to doing some of the moves at the tension level she instructs. Some I may never and that's okey dokey by me.

I subscribe to Essentrics tv and I love the new instructors. Plus live classes are regularly scheduled.

I would start with the DVDs since you have a variety to choose from. I don't have season 11, but it probably has the most up-to-date technique. Or you can try one episode from each season and see which setting you prefer.
