Homemade DIY Chocolate Liqueur - success!

Ingredients 2/3 cup cocoa nibs (bought mine from Target) 1 1/3 cup vodka 1 1/2 cups sugar 1 cup water 2 teaspoons vanilla extract Instructions: Combine cocoa nibs and vodka in a jar with a lid. Shake and let steep for 8 days. shake once a day. On the 8th day, bring the sugar and water to a boil. Let it cool and then add it and the vanilla extract to the vodka. Let steep for one more day. Strain the nibs and filter through a coffee filter into a bottle. (Note - on filtering the mixture: i assembled a coffee filter, small cheesecloth, plastic strainer over a 8" diameter bowl and poured the mixture in parts into the coffee filter. i let it sit, stirring it gently, and finally i picked up the cheesecloth and filter and squeezed it slowly over the strainer.) Enjoy. *************** i ended up making my own after driving at various liquor stores looking for bottled chocolate liqueur. Seems like Godiva brand is the best, but it's so expensive - and i wanted Dark chocolate flavor. only one store carried this, selling it for ~$30 for 375 ml. The above worked like a charm - just 9 days to make - the length is due to letting it sit in a covered jar. i added it to brownies and will try it with chocolate chip cookies. The brownies came out exquisite - i just used Ghirardelli brownie mix and added 2 T of the homemade liqueur.
