Is it better to do easy versions of exercises or try harder ones with worse form?

I am finally starting to do some workouts standing after a long lasting foot injury. My balance is not good, and one leg is weaker than the other because of not walking for so long. Anything that involves standing on one leg is hard for me. Is it better to use a chair or the wall for balance, or is it better to just wobble through the exercise? Today I did Jessica Smith's Metabolism Booster lower body circuit following Jessica's mom rather than Jessica, and even with the modifications I still used the chair for a few things.

Try a few harder, but fall back to easier. Start easy, and slowly advance.

I would be careful with form because you don't want to cause another injury by exercising with poor form and messing up your alignment by compensating for the imbalance. This happened to me (caused a secondary injury that actually took longer to heal than my broken foot) and I think it's common.

Good luck and hope you see/feel improvement in the weaker leg soon.

Correct form first with props, e.g. chair.

Go for good form so you don't risk injury and possibly not be able to exercise at all.

Form first... I have been practicing yoga for ~20 years and to this day, I still mostly modify chaturangas if I expect there's too many of them because my wrists are easily tweaked. Better to be able to get the benefit of the full practice with a minor modification (plank - chaturanga to the floor - cobra instead of plank - chaturanga without lowering to floor - upward dog) at least some of the times so I can practice yoga more often without injury

Definitely! Poor form is inviting an injury.
I have an injury (not from poor form, but being overly zealous roller skating, but injuries SUCK).
