I cannot use artificial sweeteners any more as they were disrupting my endocrine system, so I either use nuts for protein or use a non-sweetened protein powder. Amazon sells several different types.

I think it depends on the instructor and intensity of the workout. If you have a lot of muscle soreness or fatigue, then skip a day between workouts.
