I usually leave the skin on, but if there are extra-tough/thick areas, I just zip them off with a regular potato peeler, no problem.

my peeler was so mangled when I was done. It must have seen better days.. lol I'll get another one one day and see how that goes.

I prefer a peeler that you draw toward you rather than the little peelers that you drag away. like this

When it comes to sweet potatoes, I find that if they've been in your pantry for awhile they are very hard to peel. If I'm planning to cook something that requires peeled sweet potatoes, such as a stew or sweet potato oven fries, I buy them that day. Spanking fresh ones are just more cooperative.

okay. I didn't know that. I don't think I have them hanging around for days after I buy them. But, this will make me think about it.

I believe Bed, Bath and Beyond does sell that brand and thanks for the recommendation. I'm adding it to my note file on my phone so when I go to BB&B I can pick one of these up.
