These two recipes from the Cookie & Kate website have been hits, even with meat-eaters: Baked Ziti with Roasted Veggies and Enchilada Casserole. To make them vegan you can sub a non-dairy cheese that you like--Chao seems to work the best for me.

My brother and SIL gave me Isa Chandra Moskowitz's cookbook Isa Does It, and nearly everything I've made has been successful. The Thug Kitchen books are also great for beginning vegans, though their shtick wears thin pretty quickly (warning for coarse language). Their Pumpkin Chili is one of my staples.

Thanks for the links Rivercat! I’ve signed up for emails from Thug Kitchen. The recipes look great and the coarse language doesn’t bother me at all, lol. I’ll definitely be making the pumpkin chili.

I know OP asked for recipes, but this book is filled with them.

Viva Vegan by Terry Hope Romero

My family liked so many and in particular asked for over and over again the pigeon peas and rice with green sauce. Easy to put together and so delicious.

LOL! I want to make this but I have all the ingredients BUT the wine. I just received my Better then Bouillon Mushroom base that I want to try out!

I am such a fan of Better Than Bullion! Like Bragg's, a little bit goes a long way so I end up using a lot less than their suggested amounts which helps reduce sodium as well.
