Breakfast Salad

This is one of the dishes Top Chef finalist Stephanie Cmar made on the most recent season and she posted a short video on her Instagram of how to make it: https://www.instagram.com/tv/CAgPlNgAg-V/

It's so delicious and my current go-to breakfast, especially during our hot weather. The basic recipe makes 6 servings, so for just me I halve it and eat over 3 days.

4 C sweet potatoes, peeled and cubed
6 hard boiled or steamed eggs
2 C halved or quartered cherry tomatoes
2 apples, diced (Gala suggested)
2 avocados, diced
1/4 C chopped cilantro
2 T scallions, white and green parts chopped
Juice of 4 limes

1. Toss diced sweet potato with a drizzle of olive oil and a pinch each of salt and ground pepper and roast @425F for ~15 min

2. Peel eggs and remove the yolks. Chop whites and mash yolks in with sweet potatoes. Add chopped whites.

3. Add remaining ingredients and toss together.

I add the avocado before serving so it doesn't get brown and mushy, and usually add another squeeze of lime on the second and third days. Roasting the sweet potato and cooking the eggs the night before saves some time.

For anyone looking for a vegan version, I made it this weekend using a cup of garbanzos instead of eggs, mashing about a third of them to approximate the yolk. I thought it worked well, though you lose a little bit of flavor, and the garbanzos have a bit more protein.

Perfect - I can't tolerate eggs but the thought of the sweet potatoes and all the other ingredients sounds perfect for a filling breakfast to tide me over without needing a snack until lunch.
