Thanks! I just made these this morning and turned out great and filling. I added vanilla extract as well. Next time I'm going to try it with some canned pumpkin (I didn't have any in the house). I like healthy recipes with limited ingredients.

Fitgal-If you do a search in the recipe forum using "protein + pancakes" I had posted three separate recipe threads for blueberry, pumpkin and one other type of protein pancakes.

You're welcome! You can make the recipes that make two servings and reheat them in the microwave the next day. They come out fine Or you can just cut the recipes in half.

I like to top them with sliced strawberries when they are in season.

Thanks for reminding me about these. I have not made them in awhile.

2 egg whites
1/4 cup unsweetened almond milk
3/4 t. baking powder
1/2 t. cinnamon
2 stevia packets
1/2 t. vanilla

Directions:
mix all ingredients in a bowl. Stir just until they are mixed well. do not overstir.

Pour 1/3 of the batter into skillet. cook as you would with other pancakes.

I used sugar free syrup on mine. You could top with fruit, etc...


Makes 3 pancakes

125 calories
4 g carbs
2 g fat
23 g protein
3 g sugar


these are ok but not great. I would love to have fluffy pancakes.

Ingredients:
2 small ripe bananas
2 free-range eggs
2 tbsp almond flour
1/2 tsp baking powder

Haven't tried this but supposed to be good.
