SILVER DOLLAR PANCAKES

3 large eggs
1 tablespoon water
1 tablespoon vanilla extract
2 tablespoons agave nectar or honey
1 ½ cups blanched almond flour
¼ teaspoon celtic sea salt
¼ teaspoon baking soda
grapeseed oil or coconut oil for cooking

In a large bowl whisk together eggs, water, vanilla and agave
Add almond flour, salt and baking soda and mix until thoroughly combined
Heat grapeseed oil on skillet over medium low to medium heat
Scoop 1 heaping tablespoon of batter at a time onto the skillet
Pancakes will form little bubbles, when bubbles open, flip pancakes over and cook other side
Remove from heat to a plate
Repeat process with remaining batter, add more oil to skillet as needed

Yields 18 pancakes

Could probably switch out the flour to make them lower carb.

Mini Soufflé Pancakes with Blood Orange Maple Syrup

Serves: 4

Ingredients:
For the syrup:
3 large blood oranges
5 tablespoons maple syrup

For the pancakes:
3/4 cup flour
2 teaspoons baking powder
1 pinch salt
1 egg
1/2 cup Greek yogurt
3 tablespoons soy (or almond) milk
1 tablespoon vegetable oil
1 1/2 teaspoons maple syrup
1 teaspoon vanilla extract
1 egg white
Cooking spray
1/4 cup sliced toasted almonds (optional)
Fresh mint sprigs (optional)

Directions:
1. To make syrup, segment oranges: Cut 1/4 inch off the top and bottom so fruit will sit flat on a cutting board. Trim skin and pith, slicing in a downward motion. With fruit in your hand, use a paring knife to carefully cut between segments and white membrane that holds orange together. Place segments in a small bowl and squeeze remaining membrane over bowl to extract any juice, then discard. Add maple syrup and toss to coat, then set aside.

2. To make pancake batter, whisk together flour, baking powder, and salt in a medium bowl. In a large bowl, whisk egg, then stir in Greek yogurt, soy (or almond) milk, vegetable oil, maple syrup, and vanilla extract. Fold flour mixture into yogurt mixture until just combined and set aside.

3. In another deep bowl, whisk egg white vigorously, using a balloon whisk, until white and foamy and the tips hold soft peaks. Gently fold into batter until just incorporated; don't overmix.

4. Lightly coat a large skillet with cooking spray and heat over medium-low. Spoon batter into the pan, about 2 tablespoons per pancake, and spread into 3-inch rounds. Cook for 2 minutes or until pancakes have browned on the bottom and you see a few bubbles in batter. Flip and cook for 1 to 2 minutes more. Repeat with remaining batter to make 12 pancakes.

5. Divide pancakes among four plates and top with prepared maple syrup, making sure to evenly distribute the orange segments. If desired, top each with 1 tablespoon sliced almonds and garnish with mint leaves. Serve immediately.

Nutrition score per serving: 291 calories, 6g fat (1g saturated), 51g carbs, 10g protein, 3g fiber, 182mg calcium, 2mg iron, 251mg sodium

Iced Cinnamon Protein Pancakes

Makes one serving.
Ingredients
Pancakes:
4 large egg whites (132g)
⅓ cup Warrior Blend Vanilla protein powder (33g)
⅛ teaspoon ground cinnamon (0.35g)
1 teaspoon True Yacon (0.5g) (optional)

Icing:
2 tablespoons natural vanilla whey protein powder (11g)
1-2 tablespoons filtered water (15-30ml)
a dash of ground cinnamon

Instructions

Preheat your griddle over a low flame.
Beat the egg whites, protein powder, cinnamon, and True Yacon until smooth and fluffy.
Wait until the griddle is hot enough (when drops of water sizzle up).
Pour some batter on on the griddle (smaller pancakes flip more easily). These pancakes don’t bubble as much as other recipes, but they fluff up. Flip after a couple of minutes.
Cook for another couple of minutes on the other side.
Repeat steps 4 and 5 until you’ve finished your batter.


Mix ingredients for icing in a small bowl, starting with 1 tablespoon of water. Add water by the teaspoon as needed to make an icing consistency.
Stack the pancakes, top with icing, and enjoy!!

Notes
A note about substitutions: I would not try substituting whey or casein protein powders in this recipe. Other vegan proteins may work, but they probably won't be as fluffy or tasty.

Adding canned pumpkin to the protein pancake recipe made it even more tasty and filling.
It's just me that eats pumpkin so when I open a can I try all kinds of things to use it all up (even put it in my coffee LOL)

PEANUT BUTTER PROTEIN PANCAKES

Ingredients
1/4 cup raw oats
1/4 cup cottage cheese
1/2 scoop protein powder
1/2 cup egg whites
1 tbsp peanut butter
5 almonds

Directions
1. Blend all the ingredients until a batter forms.

2. Spray a hot griddle or frying pan with nonstick cooking spray, and pour on the batter, forming a small pancake shape.

3. When it starts to brown, flip the pancake over and repeat for the other side.

4. Add a tablespoon of peanut butter on top of the pancake, and add some almonds.

Makes three small pancakes.


BANANA CINNAMON PROTEIN PANCAKES

Ingredients
1 egg
2 egg whites
1/4 cup Greek yogurt
1/2 scoop protein powder (vanilla is recommended)
2 pinches cinnamon
1 small ripe banana

Directions
1. Mash the banana in a bowl and add in the egg and egg whites.

2. Stir until the mixture fully combines.

3. Mix in Greek yogurt, protein powder and a dash of cinnamon.

4. Heat a frying pan with nonstick cooking spray on medium heat and place a drop of batter onto the pan, forming a pancake shape about two inches wide.

5. After the pancake browns (should take about 20-30 seconds), flip it over and repeat on other side.

6. Feel free to top it off with some fresh bananas and a sprinkle of cinnamon.

Makes 3 small pancakes.


STRAWBERRIES AND CREAM PROTEIN PANCAKES

3/4 scoop protein powder (regular, vanilla or strawberry)
1/4 cup strawberries
1/3 cup oats
1 tbsp unsweetened almond milk
4 egg whites

Directions
1. Mix all ingredients together in a bowl.

2. Spray a skillet or frying pan with nonstick cooking spray, then place on medium heat.

3. Pour in batter.

4. When pancake starts to brown and bubbles form, it’s time to flip!

5. The pancake is ready when each side is a golden brown color.

6. Top off with some fresh strawberries and enjoy!

Makes three small pancakes.
