I might try making this in the oven tonight as I’m in the city without my IP or crock pot.

It turned out great in the oven! It did have a lot of liquid though. I strained most of the liquid off & have frozen it to use in a soup another time as it was delicious.

Glad to hear it was a success Pam! I didn't think it would come out well in the oven.

I want to experiment with different flavors - maybe an Asian theme like Thai or teriyaki.

I made this last week, ate the last serving for breakfast yesterday. I’m making this again today. This is so perfect and easy and really good.

I ate it with a serving of rice and a slice of cheese with ghost peppers (Wal Mart brand - Sam’s Triple Pepper Jack with Ghost Peppers) and sometimes with a Carb Balance tortilla (15grams of fiber per serving). Excellent.

I made this yesterday and thought it was really good and easy! For dinner last night, I made a rice bowl type thing out of it but used cauliflower rice, then added cheese, about 1/4 cup corn, fresh salsa and a dab of non fat greek yogurt. Also, crushed up a couple of the Tostitos bites size chips on top. It was so good! Figuring out how I want to eat it today!

Great ideas. I keep forgetting to buy non fat creek yogurt to use in place of sour cream.

I made this again a few days ago but didn’t have enough chicken for the slow cooker so did this on the stove top. It was still very good. After everything comes to a boil, cook on low for an hour. I thought the chicken had even more flavor. Just have to watch out to make sure all the liquid doesn’t evaporate from the pot.
