I'll +n roasted vegetables in almost any form--yum yum. If you like eggplant, something I've been obsessed with recently is thai style eggplant. I've been mashing different recipes together--this one is the closest to how I usually make it:

If you use a typical american eggplant--the big dark roundish ones--I'd recommend cutting it up into one inch cubes and salting it, and let it sit in a colander in the sink for 30 minutes--the texture and taste will be improved. Also, I like to cook mine for longer than called for so it becomes nice and mushy--I don't like the texture of undercooked eggplant.

I've posted this about a million times, but I can't resist...

I *LOVE* the cookbooks by the Moosewood Collective for veggie recipes. Particularly: 1. Moosewood Cooks at Home and 2. Daily Specials (mostly soups and salads). These are vegetarian cookbooks. (I really like the Mark Bittman app/cookbook, "How to Cook Everything Vegetarian", but I haven't looked at as many recipes in it).

I have cooked a ton out of CaH, and almost everything has been FANTASTIC. They are generally pretty quick and easy, too.

black beans

I didn't see these mentioned so I thought I would throw in my .2. I just had lunch at a ultra fantastic Mexican restaurant yesterday and I always order the same non-meat lunch - cheese enchilada and black beans. When I make them at home, I add a little (and I mean a little) finely minced garlic and stir in some cilantro.. black beans are so yummy when seasoned. Just a thought.

A medley of roasted veggies is a staple in our house and it is an easy side for entertaining too. I often mushrooms, red peppers, & zucchini as they all cook quickly, but you can use what ever you like. I toss them in olive oil and a little balsamic vinegar, spread them on a baking sheet covered with parchment paper or foil and season with salt & pepper. I convection bake them at 400 for about 10 - 12 minutes. The leftovers are good in a frittata the next morning.
