I'll +n roasted vegetables in almost any form--yum yum. If you like eggplant, something I've been obsessed with recently is thai style eggplant. I've been mashing different recipes together--this one is the closest to how I usually make it:
http://www.grouprecipes.com/72851/th...-stir-fry.html If you use a typical american eggplant--the big dark roundish ones--I'd recommend cutting it up into one inch cubes and salting it, and let it sit in a colander in the sink for 30 minutes--the texture and taste will be improved. Also, I like to cook mine for longer than called for so it becomes nice and mushy--I don't like the texture of undercooked eggplant. |
