Using Raw Cacao?

I've recently received several sample bags of raw cacao for free, but I'm not sure how best to use it. Other than adding to smoothies, what are the best things to do with it? Can I use it just like unsweetened cocoa in baking, and if so, what's the advantage or doing so?

I know VFers are knowledgeable, so I'd love any ideas; thanks!

I believe raw cacao is richer in antioxidants and less refined than regular cocoa powder. I use it in this recipe for almond butter cups http://balancedbites.com/2011/10/cho...ter-cups.html: , and I make an avocado chocolate mousse.

I'm envious of your new found stash! It can be $$$!

Thanks, Sherry & NA! I did read more online about how it's beneficial b/c it it's raw. It's frustrating though that there don't seem to be many more options for using it beyond desserts--doesn't that kind of defeat the purpose of the greater health benefits?

You can also add it to chili! It gives a nice richness to chili recipes. I wonder if cooking it affect the nutrient profile, though... Are antioxidants destroyed by heat? Hmmm... I'll have to look that up.

The avocado pudding I make with it is a dessert, but it's really quite nutritious--avocado, banana or maple syrup (which is sugar, but I only use a little) and raw cacao. I think that's all that's in it. It's very filling so you only need a little, but great source of healthy fat.

NA, the info I read sort of send that it's questionable whether the healthy properties are destroyed by heat or not. I have made avocado pudding before, without even the banana; I will have to try it again.

I use it all the time. It makes you feel good, energizes the brain. It has less caffeine than coffee, way lots of antioxidants. My favorite recipe is this chocolate ganache recipe. I keep it in the freezer and cut it into small pieces to eat. It's better than eating chocolate bars. http://www.vegetarian-home-cooking.c...e-Ganache.html

I like making Cacao avocado pudding with it. Cut up a few ripe avocados, add in some sweeter, a bit of cacao powder and blend. Taste to get the right sweetness. It's like a chocolate mousse.

I also make raw oreo cookies. Raw chocolates. . .

Hubby and I love it.
