OT: How to substitute better ingredients in old recipes?

I have some old recipes that aren't the healthiest, and I'd like to substitute fruit juice for sugar and oil for margarine. Is there any rule of thumb for doing that? Are there are any websites or cookbooks with instructions about this?

this is on-topic, by the way - there's a "recipe box" forum in VF with lots of suggestions regarding this topic.

anyhoo, it depends on what recipe you're trying to modify. in baked goods, there's a lot of experimentation before it'll come out correctly, and better to look at tested recipes that were modified. you can google for tested recipes.

if you're making sauces, you can almost do a 1 for 1 swap, but again, better to google first to see what others have used and tested.
