raw chocolate chip cookie dough bars

Chocolate Chip Cookie Dough Raw Bars (Gluten-Free and Vegan if you use vegan chocolate )

1 cup medjool dates, pits removed and quartered
1/2 cup raw almonds
1/2 cup raw pecans
1/2 cup chocolate chips
1 Tbsp. g-free vanilla extract

In the bowl of your food processor, mix together the nuts and the dates. Process until the pieces are all uniform in size and a sticky dough has formed. Add the vanilla extract and process well until combined. Add the chocolate chips and pulse just until incorporated.Line a sheet pan with parchment paper and pour the dough out onto it. Shape the dough into one large rectangular brick and refrigerate until firm, about 5-10 minutes. Slice the bar into desired shapes.*You can also roll this dough into balls straight from the food processor. These raw bars should keep in the refrigerator, in an airtight container, for a few weeks or up to a month in the freezer.

I just made these, and they are really good! They could be made vegan if you use dairy free chocolate.

You are welcome! If you scroll down to the comments under the recipe there is a link to more lara bar recipes. I had a bunch of Medjool dates to use so this recipe was perfect.

Eta: you may like the book "Power Hungry" by Camilla Saulsbury. It has a lot of raw recipes.

I posted to this thread last night and don't see it today. Thanks so much for sharing this recipe, Sherry. DH is a serious chocolate chip cookie lover (those store made chocolate chip cookies mysteriously jump into the cart when we're at Whole Foods....hmmmm....like I really don't know how they got there! ). I can't wait to buy the ingredients and give this a try as I've been trying to get him on some healthier snacks. He bought the ingredients and made himself some trail mix earlier this week, so this is a good timing.

Sherry - I made these this afternoon for DH and he was quite impressed.

I made them in the VitaMix using the dry blade container, and that worked fine (confession - it was the first time I'd used the dry blade container so I was winging it). I rolled them into balls instead of making them into bars.
