Any favorite fermented vegetable recipes?

I'm about to make a batch of sauerkraut and while we like it, some variation or something altogether different would make a nice change. Any good ideas for fermented veggies, not just sauerkraut?

I have added other vegetable such as onions and carrots to my sauerkraut batch.

I just got a book from the library--Asian Pickles" Sweet, Sour, Salty, Cured and Fermented Preserves by Karen Solomon. I have not tried anything from the cookbook yet, but love the different recipes, than the ones we are used to. There are about 10 recipes for cabbage, probably not all of these are fermented ones.

This one looks good: Tianjin Preserved Vegetable
Cabbage, garlic cloves, salt, bok choy (double the amount you put in of cabbage) and proceed as you would for sauerkraut.

If you tried it, let us know how it tastes.

I hope to make some of her Christmas sauerkraut soon.
She has recipes for all kinds of foods.
